I like the oxalate idea. I think oxalate has an affinity for calcium. (I believe this is why your teeth tend to feel a bit #39;furry#39; after eating spinach). So maybe it helps bind the spinach to limescale residues on the crockery.Or it could be that spinach is strongly coloured, so you notice it more when it sticks.Bits of orange (from orange juice) seem to be similarly recalcitrant.

Spinach is one of 4 food used to coat plates used in testing dishwashers in manufacturers R&D, and quality control on the Dishwasher production line.

When a full load of crockery is washed all the plates, cups, glassess, and cutlery are inspected minutely (Very boring) to see what percentage of spinach was not washed off the plates, and if any spinach has been tranferred to the other items in the wash load.

If the dishwasher has been correctly loaded.  Most user are unable to reach the load capacity acheived by the Manufacturer, but overlapping plates can reduce water pressure to some items leaving residue on crockery in these areas. The machine can be correctly loaded but in attempting to economise selecting a shorter cycle than recommended, reduces the amount of water being pumped through the system, with the same effect.

Foods like Spinach, egg yolk, and foods with a high starch content will not be problem if the machine starts with  a COLD PREWASH.( A hot first fill recooks the starches and spinach onto the plate, and the loosened particlesbeing hot and sticky can end up spotting surrounding crockery, which will adhere firmly when the drying period is enabled. Dishwashersthat are connected to cold water anf heat this water perform better in this area than machines that are connected only to hotwater. I happen to own one of the worlds only dual connection machines. X Dishwasher Salesman.
