From personal experience, the main limiting factor on anything of that nature is breath. But it probably helps if what you are drinking tastes good to you; water tends to get boring unless you're thirsty. But downing a liter at a go isn't that hard if you are.
I dont know the scientific answer this is just a guess but i reckon it has something to do with the temperature of the liquid. Orange juice and beer are typically served slightly higher in temperature than water (which is often chilled). This would make it closer to the temperature of the stomach and my guess is that this makes it more comfortable to drink in large quantities quickly. Try drinking a pint of water slightly luke warm - my bet is you would find it easier.
