Ginger nut biscuits always taste better when dunked in milk because the biscuit has small holes in it, so capillary action sucks liquid into these holes.. The milk then dissolves some of the sugar in the biscuit, releasing more flavour from it, and softens it making the texture nicer. if the biscuit is more porous as it will absorb more milk, increasing the effects of dunking.
