Why is a pillow cool when turned over in the middle of the night?

As a child, if I was hot at night I would turn my pillow over to find it cool and the provider of temporary relief.

I only rarely feel a need to get that cool sensation these days, but why would the pillow be cool?

In a short time the part of the pillow you are lying on will be close to body temperature while the side facing down will stay at room temperature, which is nearly always less than body temperature.
