You have almost answered the question already. If you suspected that gravity effectively moves at the speed of light then observations would back this up.

For example, if the Sun somehow was instantly vaporised into nothing, then the light from the Sun, and the gravitational path of the Earth would not alter for the 8.23 (or whatever) minutes it takes for the light and gravity field to reach us.
