We don't hyperventilate because we have been taught how to breath properly and when practicing music learn where in the score there is time to take a breath.  Some musicians can circular breath (subject of another discussion I'm sure) but they are a rarity and music music does not call for it.

Hyperventilation comes about when there is rapid panting and musicians more often produce a steay stream of air rather and quick in and out bursts.
