Plane flight

I am an A level student studying Physics. In a recent lesson, we were told that a plane's wing works by forcing the air above the wing to flow around a longer route, lowering pressure and producing lift. However, I have also recently read in a book called "Inflight science", that this is not true, and that lift is infact generated by the aerofoil shape of the wing accelerating the air above the wing downwards, creating an equal and opposite reaction on the wing upwards. Who's right?

Why do baking goods go flat when you open the stove door in the middle of the process?

I have recently baked my first muffins ever! Was a bit disappointed though after I had opened the stove door to check things out and they had gone flat immediately. Some easy explanation please?

Will global warming change the average air pressure?

I look after a pendulum clock at the University of Cambridge which I hope will achieve an accuracy of less than 1 second of error per year (www.trin.cam.ac.uk/clock). It has a temperature-compensated pendulum, but is sensitive to air pressure variation.

If the mean global temperature was to rise by, say, 4 °C, would there be any change to mean air pressure at sea level? Put simply, would global warming cause the clock to speed up or slow down?
