Why is it OK to eat the blue mould that grows on cheeses such as Stilton but not the green mould that can appear on Cheddar?

Do mice like cheese?

When I kept pet mice and offered them cheese they wouldn't touch it but I read an article about mice plagues and what to bait traps with and one of their suggestions was smelly cheese.

Why does the space between my ear and my skull smell like cheese?

Recently, I have had a bout of exma in the small space between the top of my ear and my head. Whenever I scratch behind there, my finger smells like very strong (and slightly off) cheese for about half an hour afterwards. Even after the exma has gone, the smell lingers. Is there any reason for that?

Why does my face tingle and sweat immediately after I eat certain cheeses?

When I eat certain cheeses (especially strong cheddar and old gouda), immediately after swallowing and before it reaches my stomach I get a strange sensation on my upper cheeks.

I feel a tingle and if i go for a second mouthful I get the sensation of sweating and very fine beads of sweat appear.

Why does it happen? Is it a tyramine response? Why is it so localised? - the location reminds me of a picture from an old anatomy textbook that described the position of the sensors on the face responsible for initiating the dive reflex.

If cheese is made by aging, why do sealed packaged cheese have an expiration date?

Can't they be eaten, moldy or not, even well past the expiration date?
