Why can't humans draw straight lines?

Why, whenever I try and draw a straight line, does it slope and go wonky?

I've noticed that boiling milk, when a skin forms, creates lines on the surface - what causes this?

How long a line could you draw with a single pencil?

I don't know how to calculate it, because the fine line drawn by a newly sharpened pencil gets thicker as the lead wears down, and this happens at a different rate depending on how hard or soft the pencil is.
