If for example, sunrise today here in NY, was 5 hours prior to noon, then why wouldn't sunset be exactly 5 hours after noon?

Sunrise: 7:00am

Sunset: 5:21pm (why isn't that 5 pm?) a 21 min difference.

On the longest day of the year... June 21 the difference is smaller

Sunrise: 5:25am  standard time would be 4:25 am

Sunset: 8:31pm standard time would be 7:31 pm

 7 hrs 35 mins before noon 7 hrs 31 mins after noon. A 4 min difference.

What day would the difference from noon be equal, if not on June 21st?

Or would a city have to be chosen for it's position in it's time zone for this difference from noon to be equal?

As an amateur photographer I'm familiar with the idea of light having a colour temperature and having to adjust a camera for white balance e.g. early morning light is much warmer than midday. I've read in books on photography that light before dawn is always colder than the light after sunset.  I would have expected it to be the same.  Why should the direction of the light affect its temperature? Is this just a UK phenomenon or is it worldwide ?
